The Ability of Seasoning to Inhibit Contaminant Aspergillus spp. on Traditional Food Sardine Pedetan (Sardinella lemuru)

Pedetan is processed food of seasoned sardine fish (Sardinella lemuru) which preserved by drying. Isolation and identification mold that contaminated the pedetan have been taken from 10 villages are production centers in Jembrana Regency. Molds can contaminate during storage, include Aspergillus flavus, aculeatus, niger, tubingensis. In this research, composition seasoning producer was used to inhibit growth contaminant fungi. The minimum antimicrobial inhibition test carried out well diffusion method extract tested for its on potato dextrose agar (PDA) media. Mold colonies testing effect extracts biomass were vitro with broth (PDB) results showed garlic, coriander, kaemfiera, galangal, ginger, vinegar, salt spp. Seasoning concentrations 0.5 % (w/v) diameter inhibitory zone concentration (MIC) 0.8 1.2 mm A. aculeatus 1 flavus tubingensis, respectively. at a also able up 100 colony, conidia germination, density, tubingensis fishes pedetan.
